Easy Vegan Waffles

These are the simplest, most delicious vegan waffles you will ever eat. We make them almost every Sunday and mix up the toppings. You can also enjoy them as an easy afternoon or on-the-go snack.



Ingredients


1/2 cup organic light coconut milk (without guar gum or other fillers)

3 ripe organic bananas

4 cups gluten-free and sprouted rolled oats

1 tsp non-GMO baking powder

1 tbsp fresh lemon juice or organic, raw, and unfiltered apple cider vinegar

1 tbsp gluten-free organic cinnamon

3 cups filtered water

 

 

Directions


Add all ingredients to high speed blender in the order given above

Blend until smooth

Let the batter sit for 5 minutes (while the waffle iron is heating up)

Add about ½ cup of batter to each section of the waffle iron

Cook for about 5 minutes – test for desired lightness or darkness and adjust time accordingly

Add your favourite toppings or eat them plain and simple

 


Notes/Tips


The coconut milk makes the waffles a bit crispier

If the waffles are sticking, brush the griddles with a touch of organic virgin coconut oil using a silicon basting brush.
